Paprika is dried, ground pods of sweet red peppers. It is mild and slightly sweet with a pleasant, fragrant aroma. Spanish Paprika is sweet with no heat at all.

Preparation & Cooking

Ground spices should be added just prior to the end of cooking time, as they release their flavour quickly. Paprika can be used in quantities rather than pinches; it can make an enjoyable and nutritious addition to vegetarian and health food dishes; give colour as a garnish, as well as flavour.

Serving Suggestions

Sprinkle on fish, meats, canapes, eggs, soups, sauces, and potatoes. Used in generous quantities, it is the main ingredient in Hungarian goulash and chicken or veal paprika. It is a colourful garnish for light-coloured foods and gives colour as well as a sweet capsicum flavour.

Packaging & Storage

Capsicum spices (paprika, red pepper) may be best stored in cold storage - 32-45 degrees F. - to guard against colour loss and infestation. Spices and herbs should be protected from flavour loss and moisture by keeping containers tightly sealed when not in use; avoid heat and direct lighting.
