INSTEAD OF LARGE OUTDOOR TANKS, WE USE SMALL BARRELS TO BATCH FERMENT OUR PICKLES IN A MIXTURE OF SALT, GARLIC, DILL AND OTHER HERBS AND SPICES. THE BARRELS ARE THEN REFRIGERATED UNTIL PACKING TO PRESERVE THE FRESH FLAVOUR AND CRUNCHY TEXTURE OF THE PICKLES.
